  • 1 bell pepper, chopped
  • 1 cup spinach, fresh or frozen

  • 2 cups marinara sauce
  • 1 block (14 oz) firm tofu, drained and crumbled
  • 1/4 cup nutritional yeast
  • 1 teaspoon dried basil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup vegan mozzarella cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions, then drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, cooking until softened, about 3-4 minutes.
  4. Add zucchini and bell pepper to the skillet; sauté for another 5 minutes until the vegetables begin to soften.
