  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 jar (26 oz) marinara sauce
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions, then drain and set aside.
  3. In a large skillet over medium heat, add a drizzle of olive oil. Sauté the garlic and sliced mushrooms until soft, about 5 minutes. Add the chopped spinach and cook until wilted. Season with salt, pepper, basil, and oregano.
  4. In a mixing bowl, combine the ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese. Stir in the sautéed mixture.
  5. Spread a thin layer of marinara sauce on the bottom of a baking dish. Place three lasagna noodles over the sauce, then add half of the ricotta mixture on top. Layer with more marinara sauce and repeat the process one more time.
  6. For the final layer, add the last three noodles, cover with marinara sauce, and sprinkle the remaining mozzarella and Parmesan cheese on top.
  7. Cover the baking dish with aluminum foil and bake for 25 minutes. Then remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.
  8. Let the lasagna rest for about 10 minutes before slicing. Serve warm and enjoy!
